I know it’s been a while since I’ve posted a good ol’ WTF, but when I saw this cover posted by micdel, I knew I had to share it with you all.
CALIFORNIA SCRAMBLE (serves 2)
What you need:
1/2 onion, finely diced
5 large eggs
Splash of milk
2 tbsp butter
1 tomato, diced
1/2 ball fresh mozzarella, diced
1/4 avocado, diced
Olive oil
Salt & pepper
What you do:
1. Heat a little olive oil and saute the onions until just translucent. Set aside.
2. Whisk together the eggs and milk in a small bowl.
3. Heat the butter in a frying pan until foaming (be generous with your butter; this is a more-is-better situation) and then add the eggs and scramble while they cook so they’re nice and fluffy.
4. Toss in the onion, tomato, mozzarella, and avocado, season to taste, and serve.

175g Unsalted Butter / 175g Caster Sugar / 3 Lemons / 3 Eggs / 175g Self Raising Flour / 200g Icing Sugar / Greaseproof Paper / Salt
Banana & Raspberry Pancakes - In Pictures
125g Plain Flour / 300ml Milk / 2 Bananas / 1 Large Egg / Raspberries / Caster Sugar / Salt (1)
SIEVE flour and salt into large bowl, make hole in centre
ADD lightly beaten egg to hole and about 50ml milk
WHISK and keep adding milk until batter is smooth
CHUCK batter in fridge for 30mins
HEAT a frying pan on low
THROW punnet of raspberrys into pan
POUR in a drop of water and table spoon of caster sugar (2)
STIR every few minutes until raspberrys are broken down
KEEP on heat for about 20 mins
CHOP banana (3)
REMOVE batter from fridge after 30mins
PLACE frying pan on high heat
SWIRL in some oil and drain excess
LADLE batter into frying pan and spread in evenly around pan (4)
LOOSEN edge of pancake and flip after two mins
TOP with chopped banana and raspberry sauce (5)
GO COOK YOURSELF
Smokin’ Bacon Baked Beans300g Dried Haricot Beans / 1 Onion / 1 Celery Stick / 1 Carrot / Bay Leaf / Red Onion / 2 Garlic Cloves / Red Wine Vinegar / Smoked Paprika / Brown Sugar / Worcestershire Sauce / Ketchup / 300g Tomato Passata / Salt / Pepper / Oil
SOAK Haricot Beans overnight in cold water
DRAIN soaked beans and add to a pan
QUARTER carrot, celery, onion
THROW in pan with beans and the bay leaf and cover with water
BRING to the boil then simmer uncovered for about an hour
DRAIN beans - saving cooking water - discard vegetables and bay leaf
PREHEAT oven to 150C
DICE red onion and two cloves of garlic
PUT flameproof casserole dish to a medium heat, pour in oil
CHUCK in chopped onion and garlic and cook until soft
TURN up heat and add two tbsp of red wine vinegar
SIMMER until almost evaporated
DROP in 2 tsps brown sugar and 1tsp smoked paprika
MIX in drained beans
ADD 1 tbsp of ketchup and 1 tbsp of worcestershire sauce and stir
POUR in 300ml of passata and 200ml of reserved cooking water
SEASON well with salt and pepper
TURN heat up and bring to the boil
TAKE off heat, cover with lid and throw in oven for about 2 hours
CRISP up bacon under grill and mix into cooked beans
SERVE on toast
